Dish of the day: Jibuni Soba and Konjac

Jibuni is a delicious local specialty of Kanazawa. It’s a flour coated chicken stewed with shiitake and green vegetables. Here it is presented as a sauce to dip the soba (buckwheat noodles).

Konjac is an Asian root, with almost zero calories. A weird texture and a very different taste makes it an interesting experience. It is best served with miso paste on top.
